Being on a long summer break here in the UK has given me the time to enjoy cooking and baking. Today I have a cookie recipe I'd like to share with you. It doesn't require many ingredients, it's easy and fast to make and it's delicious.
Peanut Butter and Chocolate Chips Cookies
115g Peanut Butter
1/2 tsp bicarbonate of soda
chocolate chips to your taste
Preheat the oven at 180°C. You can bake those in a mini oven if this is more convenient since the recipe doesn't make much cookies. This is actually what I did and it worked really well.
Mix all the ingredients together, adding the chocolate chips last. With a teaspoon, make little dollops of dough and place them (not too close to each other) on a baking tray covered with a baking sheet. This recipe should make approximately 15 cookies.
With the back of a fork, softly press them down a little. I like to place the fork in some water to do this in order to avoid the dough from sticking to it.
Cook in the preheated oven for 12 minutes or until nicely golden brown.
When you'll take them out of the oven, they will still be soft which is normal. Let the cookies cool on a wire rack. They will harden a little bit after cooling but will remain deliciously chewy. Enjoy...
